I would really like for my kids to use the iPad in the back seat or my wife to use her laptop while we go on vacation in the car.

I don't want to change anything else on my phone or the way I use it.

Do I need to "Jailbreak" it?
Will I be able to use all my applications I have now?

I jailbroke mine for the same reason, use redsn0w and purchase TetherMe for $4.99. Best purchase I've ever made, uses the stock personal hotspot settings so you don't need to use a 3rd party app.

Writing from my iPad 2 wifi in the car. :D
 
If you pay for tethering through AT&T or Verizon then you will not have to change anything. If you don't want to pay the $20 a month for tethering, then you will have to jailbreak to install tetherme or MyWi and risk being caught and forced to pay for tethering eventually.
 
There's no real change in how you use your phone if you're jb. If all you want is one of the tethering programs, that's all you have to install.

Pretty sure I read that Personal Hotspot requires iPh 4, so doesn't work with 3GS--right? Also, out of curiosity, has anyone used Personal Hotspot with Sofbank in Japan?
