Wondering what version of I assume Monterey will be on my new M2 for a 7/15 date. I assume that using the Apple tool to move all my stuff from old Air to new will require that both machines are on the same version of MacOS. I remember last phone I bought I had to upgrade the new one to match my old phone before I could do the data move. If a new version of Monterey gets released in the next few days I probably shouldn't install it because new M2 probably wouldn't have it.

Would be nice it they told you what version your new machine will have along with shipping information.
 
Just do the same (upgrade whatever version they came with with the latest) before moving your data from newer machines. Ezpz. No need to worry about version number.

Unless you expect you get the new machine at some point when upgrading OS is not an option.
 
The one thing I would not do is run a beta of MacOS 13 on your current machine. Don’t do that and you will be fine, as the others have said.
 
As I recall, the MacOS' migration assistant is more lenient on version matching. My mom's old mac couldn't go further than Catalina when her new one came with Big Sur. Migration worked anyway.
