Background: my 10 year old HDMI sound system has around a 25% failure rate at turning on when I turn on the apple TV. I want to get an airplay 2 wireless sound system for watching TV. I have a homepod and it's "good" but I need something with a subwoofer to really hit those lows and get those deep notes needed for action movies and the pop/hip-hop videos I listen/watch.
 
not a bad idea. I desire wireless if possible
Even a new audio system might have flaky auto-on via Airplay 2 - if that is your main purpose of replacing the current system. I just gave up and reach for the hifi remote power button when I start watching ATV. After that I can control the volume via the ATV remote.
 
I have Sonos and I like it. 1 Beam, 1 Subwoofer, and 2 One SL in my main room with TV. I have 4 more One SL's, 1 in my garage, 1 in master bathroom, and 2 in master bedroom. What's nice is the system can grow if you need it to, and it can work with Airplay 2 and/or Sonos.
Edit: Mine always works with the system, no issues. You can control the volume in each room through the Sonos app on your iPhone. I have iPhone 8, iPad Mini 3, latest Apple TV, Apple Watch steel/sapphire Series 3, and AirPort.

the receiver and the power outlet...hahah just kidding. Between the apple TV and the receiver. And the receiver and the speaker. I'm tired of dealing with rat's nests of wires. As much as I organize them they always regress.

can you control it without the sonos app? Trying to generally just use iOS but I'm flexible

you will be much happier with a hard wired connection between the aTV and the speaker.
audio sync to the video is much easier, wireless can have some lag.
and as long as it stays plugged, you don't have to worry about a settings change disconnecting your speaker.

There's a thread right now about how YouTube updated their app, and broke airplay.
I also have one app (channels) that doesn't do well with airplay at all. It does work, but it's very laggy when you use it.

I have a similar setup to discus.
There's one HDMI going from the TV to the beam, and that's it. (except for power cables to each speaker)
the beam handles the 3 front channels, and even though it looks small, it sounds much wider than it actually is, the side channels sound wider than my TV.
the connection to the rears and sub is also wireless, they just need power.

you will need to use the sonos app for setup , and tuning the room using your devices mic.
There is an app for your computer to control music, but a lot of the setup features are only on mobile.

You can airplay to all of the new sonos speakers. As long as you have those, you don't need to use the Sonos app much. But I much prefer the sonos app over using airplay. Since the music is playing on the speaker, you don't have to worry about your phone. Plus by using the sonos app, all other sonos apps will be able to control it.
you could make a playlist and start it on your computer, include the kitchen into the playing group from your phone, and adjust volume from your tablet. You can't do that with airplay.

Sonos supports a TON of music services, including Apple, Spotify, Tidal, and SiriusXM. Chances are whatever you're listing to is supported natively by sonos.

Once your TV audio is in the beam, you can use the sonos app to send the audio to the rest of the speakers around the house. no airplay needed, just group/ungroup using the app or button shortcuts on the speaker.

Sonos will join your house's existing wifi, or if you plug one speaker into ethernet, they will create their own wireless network.

Not sure of your budget but a pair of homepods sound fantastic if you want to spring for another otherwise I’d say a sonos SUB+ the new ARC or playbase (incredible) sounds great and a couple of play ones for the rear surroud and you have a lovely system, sonos is fantastic great apple like designs great company where you can truly see a lot of thought and love go into the creation of their product.
