I'm always thinking of stuff I've got to do at random times and have to note it down on my iPhone.

I've never used reminders app before as I just put it in my calendar app as a note to do.

What is the difference between the reminder app and a calendar entry? What is the reminder app?

Is this what people use to jog their memory and note down stuff to do?

Reminders app is like a To-Do list and you check things off as you go. Calendar entry is to note an important event/day. That is how I've been using both features at least.
 
Reminders also supports location based things; e.g. reminding you to pick up bread when you leave the house. Calendar is for events you'd put in a diary.
 
I use the reminders app as my grocery list. I create a list for each store then just ask Siri to add items to the appropriate list, works very well. Also add a location based entry in each list for the store location so the list pop's up when I enter that store.
