I tried on VM solution that was touted as being one-click but I couldn't get it to work. Does someone have an easy way to try it out?

I would like to try running it on a 2014 iMac or a 2021 MacBook Pro as both have 32 GB of RAM.
 
You can virtualize Ventura in a vm with UTM. You need an Apple silicon Mac to do this, it also must be running Monterey or newer.

Edit- you also need an ipsw file of Ventura.

Are IPSW files from Apple or are they derived from Apple's installations?
 
They’re from Apple, there are sites that host them but you’re supposed to have a developer account. I really don’t know the “rules”- I do whatever’s easiest

So these are safe? Or safe enough? The main feature that I want is the weather app and I suppose that there's little risk in running that in a VM.

The 2014 iMac will likely have problems as it is not supported by Ventura. Host graphics and CPU need to be compatible. I have Ventura running as a VMware Fusion client on my Monterey 2019 iMac - not easy, but can be made to work - your unsupported iMac just makes it one step harder.
The 2021 MBP is Apple Silicon and, as has been said, you can only virtualise Ventura on a Ventura host.

I was hoping for a solution from OCLP but they seem to be having a lot of problems with Ventura.

One mild headache with Apple Silicon is that RAM is really expensive relative to, say, the 2020 iMac. 2020 iMacs are still pricey on the used market to play with though I keep my eyes open for good deals. I only want to checkout the weather app as well. It might be more efficient just to do a clean install on an external SSD. I've never tried to do that on an Apple Silicon system though I hope the process is the same.

If I wanted the weather app badly enough on the 2014 iMac, I could install a Windows 10 VM and run Microsoft's which I do like. But it's a lot of overhead just to display the weather.
