What's the procedure for buying an unlocked iPhone in Hong Kong?

As the Apple website and others have confirmed, the Three (3 - carrier name) iPhone's sold in Hong Kong are unlocked - the same as the Swiss and Belgian phones.

My friend is currently in Hong Kong, and has offered to buy me the iPhone.

What is the procedure? Will he need to sign a contract?
