I was leaning toward 16GB at first but now I don't know if that'll be enough to hold a decent amount of 1080p video files. Anyone have an idea of how much space 1080p 30fps videos (obviously with varying time) take up on other phones?

It depends on the bit rate and codec the video is encoded with. I have no idea what the iPhone will use, but 1080p 30fps (I believe it's H.264 at 38,495 kbps) video from my Canon t2i is usually around 300 MB/minute.

The Apple 1080p sample without audio is about 1MB/sec.
So 1 minute about 60MB.

H.264 format

So 17 minutes of 1080p video (without audio) is about 1GB worth of space (assuming Apple didn't re-encode the video)... hmm...
