I can't find anything smaller than the fit plus.I'm trying to find the tiniest USB-C memory stick, the one that that protrudes the least; so something similar to the Samsung FIT Plus.

Looking at the innards of the connector itself it should be possible to get the size down to protruding less than 10mm; or even half that. But I don't know how much smarts you have to put into a USB-C cable/device; and don't know what chips are available for that. If I find myself with too much spare time (as if) I'll look into this, if possible maybe even have something made.For technical reasons, I don't believe that is currently possilbe a USB-C flash drive to reach the form factor of the Samsung FIT+.
I believe the smallest drive you can get ATM is the Sony Microvault in terms of size.

the fact that the usb-A has this plastic “foot” to prevent wrong positioning when placed, used by flash manufacturers to “hide” inside the usb connector large part of the flash memory. That’s not possible with the usb-c and the flash memory has to be soldered in the back of the usb connector. The size of the flash memory has to be reduced significantly in order to match the form factor of the connector.

In the army , we used to stick in the back of the screen any stuff that was light enough and needed to stay connected with a wire with a laptop.
Not a very pretty solution but it worked and I’m still using it to keep my external SSD connected with my MB Pro usb-c port when travelling.
Seems to me that almost any flash drive with a USBc plug may still have a "body" just large enough to block adjacent ports when plugged in.
I realize this isn't what the OP was looking for, but might be a halfway decent alternative for flash drives with the standard USBa port:
