Jailbreakme.com was awesome. Can't really beat that ease of use. Though, absinthe is pretty good too. Minus the initial VPN issues due to the overload of users, it was pretty simple. Didn't have to worry about DFU or anything. Click jailbreak, tap the icon once done, and you're all set.

While all the new "one touch" JB tools are nice and simple, I must vote for the newest Redsn0w versions.

The expanded list of things you can do with Redsn0w takes the cake.

It is like the Swiss Army Knife of jailbreaking.
