For as long as I've been a Mac User, for every adaptor I've needed I've been able to find on eBay for dirt cheap from a third party usually chinese manufacturer. Think we will start seeing cheap thunderbolt to ethernet adaptors? Or is thunderbolt too new/expensive of a technology for this to even be possible?

I'd say they'll pop up once demand increases, since now only Macbook Air and Macbook Pro retina flavour have any need for a Thunderbolt to Ethernet, and that's only really three computers out of many.
