I'm hunting for a new monitor and am interested in a QHD model that has 2 or more inputs. I intend to connect a MacBook and a PC to it, and swap accordingly.

That said, will the OS assume that it's back to single monitor mode when I swap?

I think that dependent on the monitor. For example I have two LG’s with two inputs each. When I switch a monitor between Windows, macOS, or Linux the desktop on the other monitor stays dual monitor mode.
 
The computer doesn't know if the monitor is on a different input or not. Unless it can sense the input is no longer active. Which would depend entirely on the monitor.
 
I have a LG OLED 55" TV as my main display, and a Benq 32" as a secondary display. Mac Mini is connected to both, and my Old Cheesgrater MP is connected to a second input on the Benq. All HDMI.

I have no trouble switching between the two inputs on the Benq. I use separate displays and mirrored all the time. I had three displays a couple of years ago. I never had a problem. I think macOS handles diplays and spaces very nicely.

So, no. The mac will not care if you switch inputs or turn it off. It will simply remember your screen and continue to feed the signal.

I have two Dell P2715Q's running via DP from a RX580 in a MP5,1

One is shared via mDP from a 980Ti in a Dell T5500.

If I switch the input on the shared one to the T5500, everything Mac OS automatically flips to the other almost instantly.

Everything Mac OS expands-back to fill both screens when I switch the inputs, accordingly.

I have attached my Raspberry Pi via HDMI on occasion, and I get similar results.
