Where are Finder's sidebar favourites stored?

So this might seem like a fairly obvious answer; com.apple.finder.plist, but I've quit Finder, and deleted this file while Finder stays quit (using Transmit as a local file browser), and relaunched Finder, to have it come back factory fresh except the Sidebar favourites I added were still there.

Which prompts the question; if quitting Finder and deleting its preferences doesn't clear this information, where is it being stored?

Some sort of cache?

ok, interestingly, on Ventura, I'm not seeing that file.
