Where are the missing watch faces?! I.E. The ones they showed during the keynote (reference attached photo). One of them included a time lapse of paris and another one was a nature time-lapse. What happened to those?!

probably removed due to excess battery usage.
 
Maybe they were having issues with those (battery life problems maybe?).

This is day 2 of being officially available. Give it time and I imagine Apple will add more in the future via updates.
 
Maybe only the rich people with the WATCH Edition will be able to access additional watch faces....
