Where do my photos go???

When I am downloading photos from a camera or phone, they just disappear into my photo files. I am given no option to direct where they go, they load and go and it can take an hour to go through all my files trying to find them. How do I set this up to control this aspect of downloading pictures.

I am using a Macbook with Mountain Lion.

Why someone couldn't have just said, "open iPhoto before you plug the camera into your computer" is a definite wonder.

When I plug my iPhone into my Mac, iPhoto asks to open automatically. There's probably a setting under iPhoto that you can make it automatically open when a device is connected (for future reference).
