Where do Old Versions of Apps go?

I've had my iMac 24" 2.8 refurb for a few days now, and I'm really loving it. Since it was refurbed, it came with iLife 08 installed and an 09 disk. So, between old drivers for my peripherals, and new versions of some apps, I've been updating a lot of stuff. Where do the old apps go? Are the new ones installed over the old? Are the old ones clogging up my drive? Does OSX have a Windows style add/remove programs?

Sometimes they get written over, which I believe is the case for most Apple apps, and other times they will be moved to the Trash first and then updated. It depends on the app.
