Where do 'sealed/new' MacBooks come from on eBay/Gumtree (UK)

considering a second hand MacBook - I usually steer clear but given these are quite late in the product cycle thought it might be prudent.

Unusually though I'm seeing quite a few of these advertised as new and pictured sealed. I just wonder where all these sealed MacBooks are coming from, given Apple's generous return policy.

There not coming from Apple. I'd say there coming from other resellers that are resealing them or selling older models that they couldn't shift.
