Moving to my new MacBook Pro, it appears I have lost the ability to setup external monitors with a single keystroke. Is there a way I can restore this? Perhaps setting F7 to this when using the Function key? Any suggestions?

Where has the F7 monitor shortcut gone?

You can just put monitor settings in your top bar, it may not be one button to turn mirror on off, but I doubt you'll miss it so much after a while (I almost never mirror anymore since I got an HDTV as my second monitor).
