I cannot find a way to locate the Gold Book that contains a list of Applications. It is supposed to reside on the Dock but I simply cannot locate it. Is it that I must build it from Scratch?

If so, that's the Applications folder. The "Gold Book" is just the image for the Address Book application, which happens to be the first app on the list. You can open Finder and drag "Applications" from Macintosh HD to the Dock and it will reappear.
You can also right-click on the icon on the Dock and select "Display as" Folder to change its appearance:
