I had to restore my itouch and when asked if I wanted to backup first, I said "yes." Now I can't find where all my data is backed up as it didn't ask me for a particular file.

Other problem is I have two iTunes accounts on one computer. I can see all the data for my iPhone (that was not restored), but nothing for my iTouch account.

Any ideas??

Open the iTunes Preferences from the menu, and one of the very last tabs on the right should have a list of your backups. Select the latest backup that corresponds with your iPod.
 
ok, found it. But how do I restore all my music? No, I didn't know I was supposed to back up to a CD first. I thought that's what the iTunes backup was for!

The iTunes backup is pretty much for everything apart from Music and Videos; things like contacts, mail usernames/passwords, notes, and any app-related information. Apple kind of expect you to have your own backup for music - mainly by having it in your iTunes library :p
