Amarok (comes with KDE) works very nicely with most iPods. I think the current gen is even supported now, but I doubt if the (K)Ubuntu guys have updated to the latest version yet. They usually go for stability before having the latest doodads.
If you have one of the new 'pods, you'll probably have to wait for "Hardy Heron" for support.
