Has the "Send all traffic over VPN connection" setting in 14.6.1 been replaced with something else? I can't seem to find it.

Note: I've never used the setting before, so it likely changed long ago.

Thanks for any replies.

ETA: The VPN protocol that I'm working with is IKEv2.

On IKEv2 this is determined by mode-config settings on VPN server side. That's why it is missing.
This option is present if L2TP over IPsec is used as a protocol.

Thanks. Makes sense. Is IKEv2 considered a "better", more modern VPN protocol than L2TP over IPsec?

Also, the problem I'm having is that the VPN will connect reliably, every time, but sometimes I can't ping the device that I'm trying to get to, despite the fact that I know, with certainty, that it's present.
 
IKEv2 can be considered as "more modern" as it uses IKEv2 to negotiate IPsec connection and L2TP/IPsec usually uses IKEv1 - and IKEv2 has options for server-side client configurations.

As far as security goes - both can be configured using similar encryption algorithms and using certificates instead of preshared keys for encryption. Most of differences can be related what kind of appliance is acting as a server.
