First I HATE buying electronic related stuff on ebay, just not a fan of it and I'm always worried about getting burned. Second I hate having to drop the price of a nice handgun on applecare from the apple store so here I sit wondering if there is another way to do this so that I don't get burned (ebay) and don't blow $500 (buying apple care for 2 macs) from apple.

Amazon.com is usually cheaper than Apple for applecare.

As for ebay.
-Make sure the seller has a good rating. (For just about any Apple product or electronics in general there are power sellers with thousands of reviews.)
-Preferably localize the results to your country.
-Read the auction carefully. To make sure you are buying the correct product, in you case the correct Applecare for your mac model.
-Pay with Paypal.

amazon is my favourite but yeah... look for feedback with ebay

Amazon for me . . .

I agree that Amazon is a good alternative to eBay and Apple. Cheaper and
free delivery - it says "5-9 days" but I don't think I've ever waited more than
3 days . . .

And I've even gotten other software fairly cheap there as well . . .
