I'm done messing around with the beta OS 4 and would like to restore to 3.x but each time I tell iTunes to restore it says "requested resource not found". Is there anywhere I can download the latest OS 3 so I can try shift + restore? Thanks.

The only reliable way to do this is by backing up your iPod, downloading the 3.1.3 firmware onto your disk (from a file sharing site), option-clicking "Restore..." in iTunes, choosing the firmware file, and letting it restore.

The above is solely for informational purposes and should not under any circumstances be attempted.

option-clicking Restore = shift-clicking Restore

Managed to find it, if anyone else is interested...

You should edit that post to remove the link before you get in trouble. It's against forum rules to post links of that type. Because then you would be helping people to pirate the iPod firmware for the G1 iPT and G2 iPT.
