Since delivery times are pushed out to December in most cases, I am trying to find a 45mm Series 7 aluminum model that is available for store pickup. So far I have literally never seen one in stock. Since there are so many variations it is quite a chore to check through each for store availability. Does anyone know which models I can narrow it down to when checking?

You may have more luck with Best Buy. Their aluminum models are showing an arrival date of 11/2 or 11/3, depending on the model color chosen. that is for the 45 mm with cellular.

The nearby (for me) Microcenter stores had several of the GPS models in stock. (41 and 45mm).
 
Just checked online for 45 mm cellular blue aluminum and 5 of the 12 area stores had them in stock as an example. No luck with the midnight color.

This was in the Philadelphia Area. Not many stores had any that I could find, but I lucked out as this was the color/size that I wanted.

Loving the new watch so far.

I purchased mine in store yesterday. My first purchase of an Apple Watch in an Apple Store.

I got the 45 MM Blue Aluminum Cellular.

This was in the Philadelphia Area. Not many stores had any that I could find, but I lucked out as this was the color/size that I wanted.

Loving the new watch so far.
Did you find it by using Apple's site or app?
 
Found 45mm Midnight Nike 2 weeks ago using Apple App. I checked for a couple days and it popped up one morning. Good luck!!

Just got back from the Apple Store with my 45mm Midnight AW7. It’s syncing now. I had been playing Apple Store Roulette for the last few days to locate/purchase the watch.

Apple Store Roulette:
I used the Apple website to spec the the watch I wanted and then bookmarked that page. A couple of times a day I would visit that bookmark and scroll to the bottom to see if it was available at any Apple Store within roughly 100mi. Pretty quickly I noticed a pattern. The AW7 would show as available at one or more the the 4 stores in my search radius. But then it would quickly become unavailable. Only to reappear as available again a few days later. I snagged mine by catching it when it first became available last night and then I quickly bought it online for Pick Up at that local store today :)

I ordered a 45 MM Graphite SS Cellular with midnight band last through AT&T.
I was having a difficult time finding any place that would be able to fulfill this order before December at the earliest..
AT&T was somehow able to already ship mine out as of this A.M.
I will say I've heard your best bet is to go into an Apple store early in the week because a lot of inventory doesn't update properly for the watches online.

The quickest way I found out to check local inventory is do the custom style picker and choose a bunch of different case and band combinations you like. Then click on each one, to see availability. In the "Order today, delivers to" shipping area if you see "Today" or "Tomorrow" then there is stock in your area, then click through to see which store below in the pickup section.

One thing I noticed is that the Apple's preset combinations on their main page are actually shipped pre-packaged (like Starlight case and Starlight band) and may be harder to find when case or band sizes aren't available. Other custom combinations let the store put together the kit themselves using available cases and bands in the store. I saw this when I picked up my Midnight case with Midnight leather band. The back sticker on the package only said Midnight Aluminum Case but didn't mention the strap. Whereas my wife's Starlight + Starlight case had both the case/strap combo on the sticker. I had also picked up Midnight Case + Abyss Braided Loop combo from another store and it was the same thing. When I opened the package, the Abyss loop inside box had a price sticker on it which meant they picked up from local stock. So if you do find one case/strap combo they have in stock they may have other combos with the case or the strap as well.

The hardest to find are the stainless steel silver 45mm, I think these are the most heavily backordered. Aluminum combos seem to be easier to find since they get more inventory just have to be diligent to daily.
 
Best Buy had some open box midnight and blue 45mm models when I checked a short time ago, but the discount was only ~8%. Plus BB is now imposing a return fee if you open even the open box models.

I got my ss silver 45 from amazon within a week. It never came up when I was watching the apple store content. Amazon worked for me because I was not trading in a watch and I am not going to activate the cellular part for awhile
 
Well I'm happy to report I picked up my aluminum Starlight 45mm with Abyss Blue/Moss Green sport loop today. I just kept checking the web site and all of a sudden one store in my city showed it as available tomorrow. I quickly purchased it last night and am wearing it now.

My AW7 Midnight w/ Tornado/Gray Sport Loop was made up in the store for pickup. It came in two boxes: one with the watch and the other with the band. The watch box contained a dummy brown band box. The separate band box had a price sticker and a tab to allow it to be hung up on the wall.

I had a Midnight Aluminum 45mm with a matching sport band on order with a Nov 19-29 delivery timeframe. Last night, the same variant, except with a black Nike sport loop, popped up at my local Apple store. I ordered it for pickup this afternoon and canceled my original order.

I also bought this same version from AT&T on Wednesday and it was delivered on Thursday
 
I was just at the Apple Store and overheard one of the employees telling someone to keep check availability online at 8AM since that’s when they refresh their inventory. I was able to snag a silver SS with midnight band which I have been looking for by randomly checking online around 8AM one morning. So this totally makes sense.
