How can I determine which app is making way too frequent ding noises on my iPad Mini?

In notifications, I turned off sound for almost every app except for the ones I'll use on my upcoming trip, and I don't think it's any of them.

In Notifications --> Mail I have only badges enabled.

When I pull down from the top of the screen, none of the notifications are from the Dings that I'm hearing.
 
I have a similar issue on my iPad2. I have basically all noises turned off, no notifications, but every night between 2 and 3 am my iPad makes that chime noise if I forget and leave it unmuted. It only happens between 2 and 3 am and there is no alert that pops up when it happens. Drives me crazy.
 
The ding is the new mail sound. I checked notification center, and the sound is on even though it doesn't appear on the list of notification types turned on for the mail app. You can turn it on/off for each email account, or you can turn it all off by going into the Sounds settings.
