I'm trying to make a backup of the TV Shows I own on DVD, but I don't want to convert / compress them. I prefer to keep them in the .vob format.

Any recommendations?

No, look at the other applications in that guide, they also just have the ability to rip without re-compressing (video DVDs already have their video stored in a highly compressed format, thus you don't lose any visible image quality via a proper transcoding process with HandBrake).
 
I did read the guide, but none seem to rip individual episodes from DVDs apart from MacTheRipper, which is a PPC application and doesn't work with Lion. :(

Why don't you want to rip the complete DVD? VLC Player and DVD Player can still access the individual episodes.
And just out of curiosity, why don't you want to transcode (re-compress) them?

At the moment I only want to rip certain episodes, and I prefer not to reduce the quality any further.

Okay. Then I am out options.
I didn't rip anything since 2007, so I am kinda out of the loop. Anyway, transcoding properly will not lose you any visual image quality.
