I currently have a 2009 Macbook Pro 15", 2.53 C2D, with a 9400M.

Now I am a hobbyist photographer, but nonetheless I still hand alot of photos (RAW). I currently have 4GB of RAM and have considered upgrading to 8GB seeing as price is not scaring me.

Now I have some options to follow:

1) Sell current mac, upgrade to quad-core i7 (2.2), with anti-gloss, 128SSD, opitbay 750GB 7200rpm drive, 8GB ram

2) Sell current mac, buy a refurb 15" i7 2.8, antigloss, buy a SSD and ram by myself, do optibay install as previous

3) Keep current laptop, install 8gb ram, 128ssd os drive, 750gb 7200 rpm optibay, and wait for another gen

Now for my final inquiry, what companies should I look at for SSDs that are compatible with OS X? I have used Patriot drives before and both crashed on me because apparently they were not compatible with OS X.

Thanks in advance!

I had a mid-2009 17" 2.8 C2D MBP and I went this route, sort-of. My version was more like this ->

Sell current mac, upgrade to quad-core i7, 256SSD (newegg), opitbay 750GB 7200rpm drive (newegg), 8GB ram (newegg), move stock 750GB drive into USB enclosure.

I have very similar needs as you do and this turned out to be a great upgrade for me.
