at the moment iMovie 11 but its more of a general question as I figure there is one/two "best" formats to start with to then encode and burn for blu-ray

Right now the footage I'm playing with is 720p.

OK, you can't create a Blu-ray with iMovie but you can create a file to be exported into a Blu-ray authoring application. I use H.264, but iMovie's AIC or MPEG2 will work too.

You need Toast, Adobe Encore, or the like to do your authoring and you'll need a Blu-ray burner to burn the disc.
