Which iphone 6 to try different carriers?

I'm currently on AT&T with a 4s, and want out (US, new york area).

I'd like to buy an iphone 6, try T-Mobile's contractless "Simple Starter Plan", and have the option to switch to Verizon if it doesn't work out.

What do I buy at the apple store? A device-only t-mobile iphone 6 for full price?
