Which is best for the new mac pro, the 2xATI Radeon HD 2600 XT or the Nvidia's 8800gt?
 
Definitely the 2 ATI 2600...

Well, if you need more than two screens it's a given.
If you dont, then the 8800. I don't think the ATI's "cooperate" to the degree that two of them makes up for each of them being pretty much worse than the 8800 card.
 
apple doesn't support crossfire or SLI, so the ONLY reason to have more than 1 video card is to power multiple displays. And each card can power two normal displays, so even if you have two displays, you only need one card.

True. Although if you use Bootcamp to game then you can enable Crossfire in Windows, it just won't have any effect when you run Mac OS X.
