Which MacBook m1 laptop is best for me

Options:
1. MacBook Air 8 gb / 256 GB
2. MacBook Air 8 gb / 512 GB ram which has 1 more gpu core than 1.
3. MacBook Air 16 gb / 256 GB
4. MacBook Air 16 gb / 512 GB which has 1 more gpu core than 3.
5. MacBook Pro m1 base model

What I do : very light video editing, moderate photo editing, moderate programming, heavy browsing, email, movies. Light emulation waiting for future versions of parallel or crossover software

2 or 5 I was going with an air but went pro. So far contrary to people here I like the touch bar for the most part. I do miss there being a permanent skip key when playing Apple Music but the pros out weigh that so far.

4 - you will really want the 16gb and video and photos can the a lot of space. Since they are not upgradable, get what you might need in the future.

I'd take 4 because you will definitely like the flexibility of more SSD space and I assume some emulation activities can get RAM-heavy. I think both of those combined will benefit you more than the sustained performance of the Pro.
