My workload is mostly going to be ram intensive and multicore heavy. I would also like to have a computer with longer battery life as a secondary concern. I also don't care about the better graphics performance on the M3 Pro chip. All of them are refurb by Apple.

Its such a hard choice because for $50 I can get a computer with faster memory and drive speeds, 2 extra GB of ram, but worse battery life. The minimal gain in multicore performance is outweighed by the worse performance in singlecore performance in my opinion, so I would consider on par performance wise with the M4.
On the other hand, for $178 extra I can get 8 more GB of ram.

All models have a 512gb ssd.

Given your requirements, I would have thought it is obvious - the one the most RAM and most fast cores. Maybe more RAM - 24 GB doesn't seem like a lot to me.
