I recently got a new computer at work, a 15" 2018 MBP, 2.6 GHz i7, 32 GB RAM, 560X and 500 GB storage. Now I've been given the option to swap it to a 15" 2019, 2.6 GHz i7, 32 GB RAM, 555X and 500 GB storage.

Thus, a slightly better CPU and a slightly worse GPU.

I do some small editing in Premiere Pro/AfterEffects/Photoshop/Indesign, but main focus is processing large amounts of data in node.js applications.

If you were given the option between these two, which one would you pick?
 
I doubt there’d be much real world difference between the two. If we had to pick between the best spec for you, the JavaScript data you process is CPU driven so based on that I’d go for the 2019.

As a bonus the 2019 has a better keyboard so for daily use it’ll be nicer to use.

Pretty much, can always add more storage via usb-c external ssd or card
 
If you're happy with the way your current system runs stick with that. Any gains from the different components are going to be negligible at best and any disruption to what you're doing is going to severely detract from those small gains.
 
I’ve had both and tested both. There are no real world differences between the two.
