Which one is best for CAD, Sketch Up, CS4 standard like Photoshop and Illustrator etc, Sims 2, AofE III, Bit Of Video Editing (make chapters on DVDs etc plus add effectcs etc), Plus just General school stuff.

Best... would be the 2.53ghz MBP, but to be honest you will probably be fine with the 2.4ghz version. steer clear of the MB if you are doing anything that requires graphics, they only have integrated chips

I would go for the 2.53, I had the 2.4MBP and upgraded it. I use my machines a lot with out the battery and the 2.53 still flys. I found the 2.4 struggled when multi tasking, the 2.53 feels snappier and responsive.
 
if apple allows dual GPU does that mean the 2.53GHz will have 640MB GPU
