A friend of mine owns a MacBook Pro 13 i5 2.3GHz (Early 2011), 4 GB RAM. Because he wants formatted, for best performance, recommended to install El Capitan, or what previous version?

I'm in doubt between Yosemite and El Capitan, who is better?

I'd say El Cap at this point. I think it's just a bit more stable

El Capitan for sure, but I would also mention upgrading to a SSD if they already haven't.
 
Upgrading RAM do not help on performance?

For SSD, my friend need to replace super drive? Do you recommend a particular SSD kit?
