I’m trying to get a MacBook Pro for Logic Pro X. I was wondering if I should get an early 2015 MacBook Pro with 2.7 ghz i5 processor and 8 gb of ram or a mid 2012 MacBook non retina and upgrade to 16 gb of ram and a new 1 tb ssd? Which one would be faster?

If price is your only concern, with the newer 2015. With the 2012. you're looking at 7 year old technology. Withe 2015 - only 4 years. Common sense should tell you this.

Performance-wise, the 15 inch is going to give you a lot more than the 13 inch. I have the 2015 13 and 15 models. The 13 has 16 GB of RAM, 512 GB of storage and the 3.1 Ghz processor. The 15 runs rings around it. Even my 2014 15 is a lot better for CPU performance.

What sort of stuff are you doing? If you’re just recording a few instrument tracks the 2015 will be great. If you’re doing some more intense multitracking with several different software instruments and sample sets you may want the extra RAM.

You also may need to consider external storage or NAS.

2012 is a pretty old system. You would likely have a battery replacement in the near future.

Also the non-retina screen looks fuzzy after using a retina. And compared the 2015 13" retina unit a 2012 13" is heavy and bulky.
