I am interested in doing digital painting with photoshop lots of layers 300+ dpi 4k x 4k canvas as well as 3d modeling in blender and getting into TVPaint animation. Which would be better a rtx 3070 ti windows setup or MacBook Pro / Mac studio? I have always used Mac systems and im a little worried switching back to windows.

Well you like mac, stick with them. You can always do the Pro, use a monitor and have the ability to move around etc.
