Why am I JB after restore?

Just like the title says..

I restored my phone from JB 4.2.1 to 5.0.1. After the Restore the phone was JB already. I didn't go through redSn0w like the very first time i upgraded to Ios5.

Was Cydia included in my stiched IPSW?
