Well, I just registered iLife 09 on the Apple site, however, what is the point? I can see the point of tethering software with a serial number to Apple, but how do Apple know I actually bought iLife when I registered it? Surely someone could just look on the box and find the part number which obviously isn't unique and register it that way? Or is this just for support when I'm using my Apple ID?

You're right, there's no real association of that copy to your machine or anything like that, and no requirement to do so.

Probably helps with Apple's demographics tracking, etc. Also, they can target various marketing emails & such. It's also probably easier to include all their software in the process than those that may be serialized (if there's any left). I don't know if FCP, Aperture, or any of the other "Pro" apps still have it.

Yeah the Pro Apps still use serial numbers.
