So, if I take a DVD out and put it back in, it starts playing where I left off.

Why does this happen? is it my computer remembering? I dont quite get how that works and I would love to understand my computer better.
 
Ya. If you want it to start from the beginning, hit the "menu" button and it will offer you the option to select where you want to start playing ("scene" option).
 
The DVD cannot remember. It doesnt have anyway to save that information (although I think it should so that it could act more like a VHS tape).
 
You could always transfer to VHS so you get the full VHS experience (having to rewind, poor image quality, tracking issues, tape jams & damage, tape wear, etc).

Use an app that remembers the last playback position if that's actually what you're after.
