I’m looking at picking up a used MBP very soon and have saw some decent deals but a few of them do not display when they were made in the overview, why is this?
 
maybe they don't know. Not every person is a macbook historian.
I rarely see an Acer 2013 or Toshiba 2015 for sale
I think he is talking about the "About this Mac" screen. My 16" says "MacBook Pro (16-inch, 2019)" but some of my older ones don't say anything. I'm not sure if this is just related to the OS version or what.

ok.. there is the model identifier you can get in the "About this mac" > System report > Hardware > model Identifier

typically macbook11,3 or macbook9,1 etc..... you can then google the model

or you can install coconutBattery, it shows the mfg. date I think and also the mfg. date of the battery
