Versions 11.0.1 to 11.1.2 are concurrently being signed. That's more than I've ever seen before.
 
I believe 11.0.3 / 11.1 / 11.1.1 / 11.1.2 are currently signed. It might be that with the recent iPhone x release there are more versions available. Or since there are no exploits available there is no reason to disable signing and force everyone to use the latest. It is as much a mystery as to why 32 bit apps slow down iOS devices, especially since they were designed for older hardware.
 
Probably since can't jailbreak or no security loophole therefore many are still being signed.
Also my suspicions is that these updates after one after another are very slight but not major in anyway maybe that's why we still see quite a lot of options available in term of software updates.

11.0.1 and 11.0.2 as well. Plus 10.3.3 for iPhone 6s only. 6-7 versions being signed at once.
