Why does Apple disable the on-line store every time it launches a product? Why not allow customers to purchase other available items in the meantime?
 
So a person doesn’t order a $2000 computer and find out 30 minutes later that a better model was just released for the same price. How much would that suck?
Yup. They’re just taking care of their customers. Also, if they had had just shut down sections of the store, it would become immediately obvious which new products they’re announcing (assuming you don’t follow leaks). So, they just shut the whole thing down for a few hours.

Doubtful. If you bought a computer the night before, you’d still have the same feeling.

In that case he will wake up 55 minutes later to find out just the same thing
 
I'm gonna assume it's simple technical reasons why they do this. Perhaps they want to bring down the product listing so that they can hard erase the caching as they put up new products across the board, and ensure everyone sees the refreshed items at the same time, globally.
 
During an update the site is in Edit mode, vulnerable to attacks. Taking it off-line for this process ensures security. Plus they get to display those cool "Be Right Back" graphics. :)

They simply do it for the anticipation it generates while folks wait and keep reloading.
 
Its something to do with the old program the website is run on

That and the fact they just love the anticipation it generates, I think over time they just didn't bother updating the system because its turned into a "traditional" thing
