for some reason, sometimes when i pinch and pinch or widen out, apple maps will go from regular to 3d mode and it annoys me! is there something i'm doing wrong? Thanks!

The only thing I can think of is that when you are pinching, you are slightly twisting your fingers which is changing the angle you are viewing the map at the same time as you are zooming.

So yes...you're doing it wrong...:p

thanks! so basically twisting the angle automatically enables 3D?
 
I think when you zoom in close enough, then the 3D buildings will appear. It only works for some cities only I guess.

Twisting rotates the map...but if you are using two fingers to pinch and slide them "up" at the same time, you will change the angle and, if close enough, will start showing 3D or flyover view if available.
