When I was in class my iPhone erased all the pictures, and then it started to restore the pictures by itself. Why does that happen? It just did it again, and it's currently restoring. I'm scared that one day it won't restore by itself, and when I connect it to the computer it will say that new "photoless" iPhone is the latest back up; consequently, losing everything. :'(

Has this happened to anyone else?

I haven't encountered this issue. But as it keeps happening you should make sure you have your photos backed up on your computer and possibly a cloud service such as Dropbox for safety purposes. Once you have the photos backed up you could try restoring your phone to factory default, the reimport the photos and see if they are deleted again.
