Why does iTunes insist on copying iTunes U content?

The only time I press the sync button is to update the podcats, but every time I do it, iTunes start backing up my ipod which takes forever, it then starts downloading the iTunes U content which I downloaded on my ipod, it then starts downloading apps from ipod and finally it updates the podcasts.

How do I make iTunes sync the podcasts and forget about everything else?
