I mean I know why it does it, it sees "im" and wants to correct it to "I’m" but surely it shouldn't do it as part of another word?!

How can I stop it doing this without stopping it from changing "im" to "I’m"...??
 
Open the TextEdit application first (this will simplify things) and then switch to the Finder. In Finder, hold the Option key down (and keep it pressed) and select the "Go" menu. In that menu, select "Library" (you can let go of the Option key now). Open the Spelling folder and drag the "LocalDictionary" file over the top of the TextEdit icon in your Dock and let go.

Thanks! I did that, but the texteditor is empty when I do...!

That rules out the possibility of the word being in the local dictionary. You've got nothing in it at all. There's only one word in mine…I added it.

I can't think of any other troubleshooting steps.
 
Try  > System Preferences ... > Keyboard > Text
I suppose you'll have a rule there to change "im" into "I'm" (both without the quotes) ?

Remove that line with the "-" button on the bottom of that panel.

But then it won't correct im to I’m will it...?
 
Just tried recreating the "im" -> "I'm" rule on my mac and enabling all the auto-correct stuff (I usually keep it off)
Mine only replaced entire words.
Maybe deleting it and adding it back ?
