If I take my watch off and leave it overnight etc the battery drains almost as much as if I were still wearing it. I don’t understand why this is. It isn’t measuring my heart rate or anything else, it doesnt have to do anything from the phone. For all intents and purposes it shouldn’t, in theory, use any battery at all when off the wrist.

So why does it just continue soaking up juice when it isn’t doing anything or connected to anything? Or is it just mine?
 
Do you have Background App Refresh turned on for any apps? Those apps can download new media
and content using cellular data (if your Apple Watch has cellular) or Wi-Fi even when you're not using it.
Maybe put your watch in Airplane mode when not in use and see how that impacts the battery drain.
