When I go to sleep, I like to play an ambient album through the speakers. I turn the screen off using the keys on the top of the keyboard (turn the brightness all the way down) and lie back. Problem is, the screen will turn itself back on every few minutes. I can fix this by swiping my finger across the trackpad and it will go back to off, but its still irritating.

I have a new MacBook Pro with High-Res Antiglare from May 2011 btw.

Go to System Preferences: Energy Saver and untick "Automatically reduce brightness before display goes to sleep". There's a bug with this setting where the system will set the monitor to the dimmest setting, even if the backlight was previously off, and that's what causes this problem. I can't believe they still haven't fixed this.
 
I had this problem on SL, but I don't see it on lion. Your other option is to use the keyboard shortcut to put the screen and keyboard off, which is what i do most often now...

I believe it is "control-shift-eject"
