looking at the long list of Mac benchmarks over the years, why do the new 16" score so high compared to the Macs of the past if people claim the 14nm processors haven't really changed over the last 5 years? just debating if the big score difference between the i7 and i9 is at all useful for anything other than video encoding time.

Don't listen to dumb people. Architecture is always refining, adding some new features or increasing clock speed or core count even if it stays on the same node. It's been like this since the 70s.
